Granola from Ljubljana Market
INGREDIENTS:
- 200 g rolled oats
- 70 g walnut kernels
- 70 g almonds
- 70 g pumpkin seeds
- 50 ml sunflower oil
- 1 handful of dried dates
- 3 tablespoons honey (or substitute with another liquid sweetener for a vegan option)
- 2 tablespoons buckwheat groats
PREPARATION METHOD
Preheat the oven to 170°C (350°F).
Line a small baking sheet with parchment paper.
In a food processor, combine the almonds and walnuts and grind for 20 seconds until you have a mixture of finely ground and coarsely chopped nuts.
In a bowl, mix the ground nuts with the oats. Add the pumpkin seeds and dates, then pour in the oil and honey and mix as well as you can. Finally, stir in the buckwheat.
Spread the granola mixture evenly on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, stirring once during baking to ensure even browning.
Let the granola cool on the baking sheet before storing it in an airtight container.
Serve the granola with yogurt, milk, and fresh fruit.
