Banana cake

The pastry master from the Lolita pastry shop shared a recipe with us for a delicious banana cake. Take some time and indulge your favorite sweet tooth with it.
INGREDIENTS
Caramelized bananas:
- 60 g white granulated sugar
- 260 g ripe bananas
Cake batter:
- 20 g passion fruit puree
- 200 g brown sugar
- 80 g floral honey
- 250 g melted butter
- 5 eggs
- 270 g all-purpose flour
- 10 g baking powder
- 100 g milk chocolate
- 100 g banana chips
- 100 g sliced fresh bananas
Chocolate glaze:
- 350 g dark chocolate
- 100 g vegetable oil
- 100 g finely chopped banana chips
PREPARATION METHOD
Caramelized bananas:
Caramelize the sugar, add sliced ripe bananas, and cook for 5 minutes. Allow to cool.
Cake batter:
In a mixing bowl, weigh passion fruit puree, brown sugar, floral honey, melted butter, and cooled bananas with caramel. Mix slowly and add whole eggs one by one.
In a separate bowl, weigh flour and baking powder, mix, and gradually add to the previously prepared mixture, spoon by spoon, until thickened. Finally, add chopped milk chocolate, banana chips, and sliced bananas.
Pour into a baking mold and bake at 170°C for 30 to 35 minutes.
Glaze:
Prepare a glaze for the cake from dark chocolate, oil, and finely chopped banana chips.
Once the cake has cooled, pour the glaze over it and wait for the glaze to set.
