APPLE ŠTRUKELJ ROLL
Apples are in season in autumn and often end up in fragrant desserts like apple strudel, apple turnovers, pies, and compotes.
For you, we have a slightly different idea: apple štrukelj roll, as prepared in the štrukelj shops of Moji štruklji Slovenije. The ingredients are sufficient for one štrukelj roll.
INGREDIENTS
Dough:
- 250 g flour (sifted)
- 2 tablespoons oil
- 1/2 teaspoon salt
- 1.5 dl lukewarm water
Filling:
- 500 g grated apples
- 210 g mascarpone cheese
- 10 g sugar (or to taste)
- 300 g sour cream
- a handful of raisins, pre-soaked in rum
- 1 teaspoon cinnamon
- 1 teaspoon grated lemon zest
Topping:
- toasted breadcrumbs in butter
PREPARATION METHOD
First, prepare the dough. Mix and knead the ingredients, then coat the dough with oil and let it rest for 1 to 2 hours.
In a bowl, mix all the ingredients for the filling and toast the breadcrumbs.
Roll out the dough on a cloth or floured work surface.
Spread the filling evenly over the dough and roll everything tightly into a strudel. You can also make smaller strudels.
Wrap them in aluminum foil that has been greased with oil and steam for about 45-50 minutes.
Toast breadcrumbs in butter and pour them over the strudels.
