His style is dominated by locality, seasonality, traceability, and sustainability, which he defines through ingredients, the changing seasons, and tradition between the Alps and the Mediterranean. To his refined techniques and rich experiences gained worldwide, he adds youthful creativity and courage, making his dishes tell unique stories.
